(TRAVPR.COM) INDONESIA - October 8th, 2015 - Intercontinental Bali Resort is proud to present the celebrated Italian Chef, Massimo Mantarro,of the Principe Cerami Restaurant in Taormina Sicily, which opened in 2004 and for which Chef Massimo has earned two Michelin stars. The first star was awarded in 2008 and the second in 2012. Massimo Mantarro also won the Gambero Rosso ‘Best Emerging Chef’ award in 2011, and says he is “now looking to get the third star,” maintaining “I am continuously striving for perfection.”
Chef Massimo began his culinary career at the Hotel Institute of Taormina in Sicily before studying and practicing at two of the world's leading culinary schools: the esteemed Institute Etoile in Venice, and Ecole Lenôtre, the French school of Haute Cuisine in Paris. He then honed his skills at some of Italy’s most prestigious restaurants, including Hotel Villa Sant'Andrea in Taormina, Savini Restaurant in Milan, The Exchange Restaurant in Turin, the two-star Michelin Mulinazzo Restaurant in Palermo, the two-star Michelin Ristorante Don Alfonso 1890 in Sant'Agata sui due Golfi, which is known as one of the best restaurants in Southern Italy, and the Dome Restaurant in Ragusa, which also has two Michelin stars. In 1991 he arrived at the San Domenico Palace Hotel in Taormina, where he worked with several famous Michelin-starred chefs before taking up the position of Executive Chef in 2003. The following year, his adventure continued with the opening of the San Domenico Palace Hotel’s gourmet restaurant, Principe Cerami.
“Cooking, for me,” declares Chef Massimo, “stems from my family’s tradition of cooking. It is my heritage. All of the basics I have learned from my family.” This innovative chef’s art now lies in bringing his Sicilian touch to refined haute cuisine, transforming conventional classics into light and exciting, modern Mediterranean adaptations, in which the consistencies and combinations of the ingredients will vary, but all of the rest will remain faithful to the time-honoured essence and harmony of Sicilian flavours.
Visitors and guests at InterContinental Bali Resort will now have the opportunity to experience a choice of events hosted by Chef Massimo, including some exclusive cooking classes, some à la carte gastronomic dinners, and a wine dinner with a seven course tasting menu, all of which will be taking place at the Resort’s Bella Cucina Italian Restaurant from 4th to 8th November 2015.
Chef Massimo's à la carte and tasting menus will feature stunningly presented antipasti and primi piatti dishes such as ‘Chickpeas fondue with wild fennel,’ and ‘Pan-browned quail with avocado mayonnaise,’ as well as one of the chef’s favourites: ‘Linguine alla Norma’ with aubergines and marinated prawn tails – a typical Sicilian dish named after an opera by Vincenzo Bellini. Secondi piatti delightsmight include ‘Steamed cod with fresh sautéed vegetables and Pizzaiola sauce’ or ‘Beef fillet flavoured with rosemary, puréed carrots and Marsala wine sauce’ followed by a mouthwatering dessert such as ‘Ricotta cheese cassata with candied fruit Messinese style and green cardamom sauce.
