His role includes sourcing the fresh, local ingredients from Hokkaido and other parts of Japan for guests staying in three resort properties; The Orchards Niseko, Niseko Country Resort and Akazora. MnK guests can enjoy Richard’s expertise via gourmet food delivery, private dining, and catered events featuring both Japanese and Western style cooking.
“Niseko is a destination for people who love to eat due to the abundance of high quality food from Hokkaido, however, some restaurants are often booked months in advance and many are not suited for large groups.” explains MnK Niseko’s Director Eddie Guillemette. “Having Richard on board allows our guests to eat well with family and friends, in a relaxed setting, at a time and place of their choosing.”
Guests will be able to enjoy Japanese inspired favourites such as shabu-shabu and sashimi, as well as seasonal Western dishes including hearty roasts, and other cherished holiday meals - all in the comfort of their chalet, apartment or at events at The Orchards Niseko Clubhouse.

Richard hails from Portland, Oregon where he studied at the Le Cordon Bleu College of Culinary Arts. Richard has over 20 years’ experience as a chef, working in Europe, North America and Japan. He has spent the last 15 years living in Japan, during which time he has worked as the Executive Chef for establishments such as Micuras Hotel in Atami, Cross Hotel in Osaka and Sapporo, as well as Mercure Hotel in Sapporo, and most recently at IKI Restaurant in Niseko.
